I learned to cook to make people happy. Along the way, I discovered that that is not enough. Flavour always plays a leading role, but nutritional value - what our body takes from each meal - must always be the co-star. I want flavour and healthiness to be in complete harmony.

My cooking

I have been fortunate enough to sharpen my knives and my brain in the kitchens of 3-Michelin-starred restaurants. That is where I learned to manage my ingredients, to cook simply, to obtain exuberant flavours without resorting to the easy solution of fats. To make food that feels familiar but also brings a pleasant surprise to the palate every time.

My ingredients

True flavour is found in good ingredients. When you have good ingredients, there is no need for fanfare. I choose my ingredients one by one, using the very best suppliers. The meat comes from Animal Welfare certified farms, and animals that are not given hormones or antibiotics. The chickens are free-range. We use no preservatives or flavour enhancers.
